Meatballs stuffed with baked mozzarella


*ingredients:

°1 grated onion
°12 c fresh chopped parsley
°2/3 c Parmesan cheese
°1/3 c Italian rusk
°1 egg
° 2 tsp marinara sauce + 1/3 cup
° 3 cloves of minced garlic
° a pinch of ground red pepper
° salt and pepper to taste
°1 package ground beef (1.5-2 lbs.)
°16 cubes of mozzarella cheese (1/2 inch cubes)

*to prepare:

Place the oven rack in the lower third of the oven. Preheat oven 400 degrees. In  bowl, combined onion, parsley, Parmesan cheese, bread crumbs, eggs, marinara, garlic, red pepper flakes, salt, also pepper. Once mixed, add the beef and mix with your hands. Shape the meat mixture into 16 balls.
Poke a hole in the center of each meatball and place a cube of mozzarella cheese inside. Fix the meatballs until the cheese is completely gone. Pour 1/3 c of marinara to bottom of baking dish. Place the meatballs inside and drizzle with some extra virgin olive oil. Bake for 15 minutes, until cooked through.
